Ingredients

Cake

  • 150 g sugar
  • Zest of 1 lime
  • 125 g Butter
  • 150 g self raising flour
  • 50 g Desiccated Coconut
  • 1 egg
  • 120 g coconut milk (or light and creamy coconut flavoured evaporated milk)

Lime drizzle

  • 1 lime
  • 75 g Granulated sugar

Recipe's preparation

  1. Grease 20 cm cake tin and line base with baking paper

    Place sugar and lime rind in TM bowl and process for 5 seconds on speed 9.  Remove and set aside.

    Place butter into TM bowl and melt for 2 minutes at 60C on speed 4

    Add all remaining cake ingredients (including the sugar!) and mix for 30 seconds on speed 5

    Pour into prepared cake tin and bake at 180C for 30-35 minutes until a skewer inserted, comes out clean. Allow it to cool in the tin for 10 min.

    Meanwhile mix together the granulated sugar and the juice of the lime in a little bowl.

    Use a skewer to make holes all over the top of the cake and spoon over the sugary lime juice. As the cake cools, thi will form a zingy, crunchy top.

Tip

You may serve it with some whipped cream - delicious!

    Lovely Flavour


    This cake is very moist and has a lovely sweet & sour flavour. As it is only a small cake mix, it turned out quite flat using a 20cm cake tin, so next time I'll try making it in a small loaf tin.
    I like it really tart, so also used equal amounts of lime juice and icing sugar to make the drizzle.....very yum, thank you!

    Delicious and easy. I reduced the sugar in the cake to 100gr and just used regular milk. Lovely lime flavour and it stayed fresh for a few days

    Lovely flavour, very moist and easy to make. I did halve the sugar but I do that with most recipes and it still was sweet enough. Definitely will be on the regular cake making list!!!
