- 4 egg whites
- 250 g almond meal, (refer to Basic Cookbook for recipe)
- 65 g coconut oil
- 25 g Natvia or sweetener of choice
- 5 g vanilla essence

Line two oven trays with baking paper
Preheat oven to 180 degrees celcius
Insert butterfly whisk into bowl. Add 4 egg whites. Insert measuring cup into lid. Whisk for 4 minutes on speed 3.5.
Scrape down inside of bowl with spatula.
Add 150g of almond meal, 65g of coconut oil, 25g of Natvia or sweetner of choice and 5g of vanilla essence.
Mix for 3 minutes on speed 3.
Add 100g of almond meal.
Mix for 2 minutes on speed 1.
Transfer sticky biscuit base into a mixing bowl.
Roll biscuit base into small to medium sized balls and place on tray - biscuit mixture will be sticky but should not stick to hands once rolled.
Rub the back of a soup spoon or fork in coconut oil and then almond meal to prevent from sticking to biscuit mixture and flatten each biscuit ball, coating spoon or fork each time. You can also flatten using your hands and water but may find the mixture sticks a bit and biscuits are distorted.
Place biscuit tray into preheated oven, bake for 15 minutes or until golden brown. Thinner or smaller biscuits should be ready in approximately 12 minutes.

For smoother biscuits, you can add an additional 100g of almond meal after step 6 and mix for 1 minute on speed 1
I really enjoy the ingredient base used - a simple, healthy low carb alternative to normal sweet biscuits.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
