Ingredients
Bars
- 150 grams rolled oats
- 70 grams unsweetened/unflavoured protein powder
- 15 grams rice bubbles cereal
- 4 pinches fine salt
- 120 grams KRAFT No added salt, no added sugar Peanut Butter or any other nut/seed butter
- 120 grams Queens Sugar-free maple syrup or Rice malt Syrup or any other liquid sweetener of choice
- 1 teaspoon vanilla extract or paste
Topping
- 3 tablespoons mini dark chocolate chips
- 1/2 tablespoon coconut oil

1. Line a sqaure 8 inch baking tray with wax-proof paper
2. Place rolled oats into TM bowl mill 20 sec/speed 6 till flour like consistency.
3. Add protein powder, rice bubbles, salt, peanut butter, maple syrup and vanilla. Mix 10 sec/speed 4. Consistency should be like little ball clusters.
4. Spoon mixture into cake pan and press down with back of spoon till even, compacted and smooth on top.
5. Place in freezer for half an hour.
6. Meanwhile, clean TM mixing bowl for final step (or do final step in a small saucepan). Melt chocoalte chips and coconut oil together 2 mins/100/speed 1.
7. Take bars out of freezer and pour melted chocolate mix over bars. Wait a minute or two till the chocolate is mostly set then lift bars out by lifting the wax-proof paper out of the cake pan. (Alternatively, you can cut into bars first and drizzle chocolate across bars)
8. Slice into 12 bars and keep in the freezer or fridge. Can leave to defrost on the bench before eating or if I'm in a hurry, I like to warm mine in the microwave for 10 secs to soften from frozen.

Tip
They can be a little crumbly but the taste is great and so much cheaper than buying protein bars in the store.....plus, you know exactly what's in them!

being an uneducated male even I can see that this is no way near being a low carb recipe what were you thinking?
Definitely not low carb. I was disappointed when I saw the ingredients.

Please be careful using the term 'low carb' These are very carb dense, with the oats, rice bubbles (high in sugar), maple syrup and rice malt (although lower GI, still a lot of carb). There are many Type 1 Diabetics who adhere to strict Low Carb diets and this wouldn't be ideal.
