Lumberjack Cake
- 2 apples, cored
- 120 g dates
- 1 tsp bicarbonate of soda
- 250 g Boiling water
- 125 g Butter, room temp, cut in to cubes
- 1 tsp vanilla essence
- 230 g caster sugar
- 1 egg
- 370 g plain flour
- 60 g Butter
- 120 g brown sugar
- 120 g Milk
- 75 g Shredded coconut

- Grease and line 23cm cake pan
Preheat oven to 120C - Place apples and dates in bowl.
Chop on speed 5, 5 seconds
scrape down bowl and repeat - Scrape in to separate bowl
Place bowl on lid and add 1tsp of bicarb and boiling water
Set aside - Add butter, sugar, vanilla and egg
Insert butterfly whisk and mix speed 3 for 1 minute, or until light and fluffy
Remove butterfly whisk - Add flour
Add apple mixture back in to bowl
stir speed 4, 30 seconds - Pour in to prepared tin and bake for 50 minutes
- Add butter, brown sugar, milk and shredded coconut
mix stiring speed, 5 minutes, 80 degrees - Remove cake from oven, spoon mixture over cake and bake for a further 20 minutes.
Remove from oven and allow to cook for 5 minutes before turning out onto a cooling rack
