Ingredients

  • 150 grams Butter
  • 150 grams dried apricots
  • 150 grams Dried pears
  • 150 grams sultanas
  • 90 grams brown sugar
  • 1 teaspoon mixed spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon bicarb soda
  • 2 eggs
  • 90 grams plain flour
  • 90 grams SR flour

Recipe's preparation

  1. 1.  Pre-heat oven at 180deg. fan-forced.

     

    2.  Place apricots and pears in bowl and chop 4 sec, speed 5.

     

    3.  Add butter, sultanas, sugar, spices, bicarb soda and 150mls of water to bowl. Cook 4 mins, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" , speed 1.

     

    4.  Leave in bowl to cool a little, about 10 minutes is fine.

     

    5.  Add eggs to bowl and beat 5 secs, Counter-clockwise operation"Counter-clockwise operation" , speed 5.

     

    6.  Add flour to bowl and combine ingredients, 15 secs,Counter-clockwise operation"Counter-clockwise operation" ,speed 3.

     

    7 Cook for 16 minutes in a muffin tray. 

Tip

Great as they are for kids lunchboxes.

For Christmas, I dip the tops in melted white chocolate and place a jaffa on the top.

    Very good and easy recipe..made for Christmas time. Had very few dried apricots and no pears..so just substituted other dried fruit eg. Glace cherries etc. Luckily had enough sultanas though! Turned out really well.Thanks.

    Great light fruit cake recipe in snack size.
    So easy to make, they keep well & hubby loves to take them in the truck for a snack! This is definitely our go to fruitcake recipe now that the grandparents are no longer able to supply the family with Christmas cakes! Thank you for sharing!

    will definitely make again especially for Christmas.

    Yummy, these are so light and delicious. I’ve used up left over Christmas fruits and bought another load to keep making them, hubby loves taking them to work for snacks. I’ve found so far any mix of dried fruit works I just keep total amount the same. I’ve also added a green apple roughly chopped. Thanks for the recipe.

    These are absolutely beautiful. I didn't have dried pear and my apricots were past their date so subed raisins and cranberries. Will definitely be making these again. Thank you for a simple but wonderfully tasty recipe.

    Yummy, I replace 50ml of the water with port, at the end of the cook, also use a variety of fruit and nuts
