Ingredients
- 250 g unsalted butter cubed
- 150 g sugar
- 300 g plain flour
- 90 g rice flour, made from brown rice
- 70 g macadamias
- 2 teaspoons lemon zest, (approx 1 medium lemon)

Preheat oven to 170 degrees.
Add macadamia nuts to TM bowl & dry roast for 15 minutes on Varoma temperature "Counter-clockwise operation" speed "Gentle stir setting" . Put aside & allow bowl to cool.
Place brown rice in TM bowl & mill for 1 minute on Speed 9.
Add sugar & mill 10 seconds speed 9.
Add lemon zest & mill for another 10 seconds on speed 9.
Add roasted macadamias & chop for 5-8 seconds on speed 8.
Add in all other ingredients & mix for 15 seconds on speed 6 until the mixture is just coming together.
Set to closed lid "Closed lid" position & mix for 30 seonds on interval speed "Dough mode" . The mixture will start to clump together but will not blend.
Tip mixture onto a Thermomat or floured surface & bring together with hands. Don't overhandle as it will get sticky. Form into a ball & cut that in half.
Place half, also formed into a ball, between 2 sheets of baking paper & roll out to about a 22cm round. Flute edge, score into segments & prick with a fork. Do the same with the other half.
Bake for 15-20 minutes, swapping trays around half way through cooking, until pale golden & firm.
Tip
Halved macadamias are much cheaper to buy than whole ones & they don't take long to roast due to high oil content. Don't overdo them or they will become unpleasant tasting.

Best ever Shortbread I have made. Extremely light. I substituted Macadamias with Almonds.
Yummy even GF.
I used 200g of GF plain flour with these and 190 of rice flour and they turn out nice. Sprinkle vinalla sugar on top as well.
