Ingredients

Medenjake - Honey Cookies

  • 150 g unsalted butter
  • 440 g plain flour
  • 1 heaped teaspoon bicarbonate soda
  • 2 eggs
  • 200 g sugar
  • 4 heaped tablespoon honey
  • pecan nuts, for decoration

Recipe's preparation

  1. Add butter to TM bowl and pulverise for 10 seconds on speed 8.

  2. Add flour and bicarb soda and mix for 30 seconds on speed 4.

  3. Add remaining ingredients except for the pecan nuts and mix for 30 seconds on speed 4.

  4. Roll dough into little balls (a little larger than a macadamia nut in its shell) and press down on tray to flatten a little. Add a pecan nut to the top.

  5. Cook in 170C oven for 10 minutes or until golden brown. Do not think you are over cooking them. This batch normally covers 3 trays.

  6. Final product!!!

    There is only one problem with these Medenjaci and that is ..... You just can't stop eating them! They are so delicious. I only made half a batch and took Dohatch's advice and put them in the fridge for a while before making the balls. Also I put chopped walnuts on top  as some walnuts were already broken. Well done Vee and thank you.  Cooking 7  tmrc_emoticons.)

    I made these for the third time but this time I added 70 g milled walnuts to the mixture.  So delicious.  Cooking 7

    Absolutely scrumptious.  Easy to make and hard to stop them disappearing!

    The dough is a bit sticky, so I did cool it in the fridge for a few minutes before trying to scrape it out of the bowl.  Works just as well with a half-batch and still makes about 30 biscuits.  I used 1/3 of a date on each biscuit instead of the nuts on top and that worked very well.

    Very easy! I found I needed about 500 gms of flour because my honey was on the runny side.  Otherwise great...now all I need is to hide them from the kids, becasue there will be none left for Christmas! Big Smile
