Ingredients

Base

  • 125 grams Butter, cubed
  • 60 grams sugar
  • 150 grams plain flour
  • 40 grams self-raising flour

Topping

  • 150 grams plain flour
  • 2 level teaspoons cinnamon
  • 80 grams brown sugar
  • 125 grams Butter, cubed

Filling

  • 400 grams condensed milk
  • 30 grams Butter, cubed
  • 40 grams golden syrup
  • 3 level teaspoons Instant coffee powder
  • 40 grams walnuts, chopped

Recipe's preparation

    Base
  1. * preheat oven 180 deg
    * cream butter and sugar 1 min/sp 3-4 until just combined.
    * add flours, mix to a firm dough using dough mode/30 sec
    * press evenly into a greased 25cm x 15cm tin
    * bake base in pre-heated oven for 10-12 minutes.
  2. Topping:
  3. * add flours and butter to mixing bowl, mix 5 sec/sp 8 to form a firm dough
    * wrap in cling wrap and place in fridge for half an hour
  4. Filling:
  5. * add condensed milk, butter, golden syrup, coffee powder to mixing bowl with mc, cook for 15-20mins/80deg/sp2 or until thick
    * add chopped walnuts to filling and combine 5 sec/sp 5
    * pour filling over the base
    * remove topping from the fridge and grate evenly over the filling
    * bake in moderate oven for 15 minutes until golden
    * leave to cool in tin for 15 minutes
    * cut into slices and enjoy

Tip

Topping can be made ahead of time and kept in the fridge to firm up. Only remove topping from fridge when ready to use. Either grate topping using a hand grater or in the Thermomix 3 sec/sp 7.
Walnuts can be chopped in the Thermomix 5 sec/sp 5.
