  • 370 grams plain flour

Recipe's preparation

  1. Preheat oven to 160 degrees

    Place all ingredients in the bowl

    Closed lid"Closed lid" mix 15 seconds speed 6

    Mixture should look like crumbs

    Dough mode"Dough mode" kneed 45 seconds

    mixture should now be more together like a soft dough

    * edited to add may need to repeat this step one more time

    turn out onto bench and push together

    break in half and hand roll into short logs

    I find popping them into fridge for 20 mins helps with cutting

    line trays with baking paper and slice or cut into desired shapes. I go for about 1cm thick slices

    Bake for 20-25 mins depending on thickness


    * this pic is a triple batch I made (lots sampled by the family) , the paler ones were trailed with nuttelex for dairy free. Worked fine

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     this is a really delicious shortbread recipe. popping it in the fridge definitley makes the mixture easy to handle. Simple quick to make, they are melt in the mouth.

    I must have done something wrong. When I got to the stage where I had to roll it out, it wouldnt come together easily. In the end I just flattened into a Swiss roll tin.

    I think my oven must be slow today, so I put the heat up to 180 to give them some colour.
