  • 75 g cold pressed, coconut oil, could sub for butter if necessary
  • 120 g almonds, unsalted and roasted
  • 80 g Cashews, unsalted and roasted
  • 220 g pitted dates, medjool best
  • 30 g dried cranberries, could sub for dates or apricots
  • 20 g cacao powder, raw, could sub for cocoa
  • 60 g dessicated coconut
  • 1 pinches Himalayan salt
  • 18 g Pure Maple Syrup
  • 200 g 72% dark chocolate, for the chocolate layer topping
  • 1 tablespoons cold pressed, coconut oil, for the chocolate layer topping

Recipe's preparation

    METHOD
  1. Line a rectangular baking tin (26 x 16 cm) with baking paper and set aside.
  2. Place almonds and cashews into mixing bowl and chop 8 sec/speed 7. Transfer into a small bowl and set aside.
  3. Place dates, cranberries, coconut, cacao powder, salt and syrup into mixing bowl and chop 30 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  4. Add reserved nut mixture and coconut oil and mix 20 sec/speed 5.
  5. Transfer mixture into prepared tin and press down evenly. Place into refrigerator until firm (approx. 2 hours).
  6. TOPPING
  7. Place chocolate into mixing bowl and grate 5 sec/speed 8. Scrape down sides of mixing bowl with spatula.
  8. Add coconut oil and melt 2 min 30 sec/50°C/speed 2, or until oil and chocolate are melted.
  9. Pour chocolate mixture over base and set aside to cool. Place into refrigerator for approx 1 hour or until set.
  10. Remove from tin and cut into squares. Store in a sealable container and place into refrigerator until ready to serve. Also freezes well.

Tip

You can sub for what nuts or dried fruit you have at home. Keeps nuts and nut flours fresh by storing in the fridge.
