Ingredients
Brûlée
- 4 cups water, Or mix of milk and water
- 3 Cups oats
- 1/2-1 level teaspoon salt flakes, To taste
- 1 Cup whipping cream
- 1/2 level teaspoon Vanilla essence or extract
- 1/4 cup Sugar (I used caster sugar)
- 3 egg yolks
- 3 tablespoons Demerara sugar
Rasberry Coulis,
- 200 grams frozen raspberries, Or fresh
- 1/2 cup sugar, Can use raw.
- 3 tablespoons orange juice

Heat water in TM bowl add salt and oats and bring to simmer 80-90 degrees on speed 2 lower temp to 50 degrees for 8-10 minutes or until water is absorbed and oats are tender.if too thick add some more liquid. Divide among 4 ramekins and place on baking sheet lined with foil. Set aside. Wash bowl and add cream. Heat to 90 degrees, stir in vanilla. Whisk egg and sugar together in small bowl and pour about half cup of cream in a thin stream whilst continuing to whisk. Pour egg mix back into bowl and blend for a few seconds speed 3/4. Pour over oatmeal and bake in oven150 degrees for 35 minutes or until almost set. Remove from oven and heat grill. Sprinkle Demerara sugar evenly over brûlésand place under grill until tops are caremelized. Cool for 5-7 minutes before serving with Rasberry Coulis.
While brûlées are baking prepare sauce. Combine raspberries sugar and orange juice in bowl. Heat to 50 degrees speed 3/4. Blitz for 30 seconds and strain into a small jug.

A very special way to serve porridge. If you prefer a smoother style mill the oats first to your liking.
