Ingredients
Oaty Caramel Slice / Chelsea Winter
- 250 grams Butter, cubed, at room temperature
- 200 grams brown sugar
- 2 tsp vanilla essence
- 200 grams flour
- 1 tsp baking powder
- 200 grams rolled oats
- 65 grams dessicated coconut
- 1/4 tsp salt
Condensed milk
- 40 grams unsalted butter
- 125 grams water
- 180 grams raw sugar
- 110 grams milk powder
- 1 pinches salt
Caramel
- 1 portions sweetened condensed milk, made in previous step
- 150 grams Butter
- 32 grams brown sugar
- 2 tablespoons golden syrup

- Preheat your oven to 160°C (regular bake). Line a 20x20 cm or 20x30 cm slice tin with baking paper, making sure it fits well around the corners and up the sides.
- weigh 250 grams of butter cubed
- add 200 grams brown sugar
- add 2 tsp vanilla essence
"Blend" 30 sec/speed 4
- add 200 grams of flour
- add 1 tsp baking powder
- add 200 grams of rolled oats
- add 65 grams dessicated coconut
- add 1/4 tsp of salt
"Blend" 10 sec/speed 4
- scrape down the sides
"Blend" 15 sec/speed 4
mixture will be crumbly - mix more if needed.- Press about 2/3 of the oaty mixture into the base of the prepared tin and set aside. (leave 1/3 to crumble on top of caramel layer later)
- place butter and water into mixing bowl and 3 min/120°C/speed 2
- Add a pinch of salt and 180 grams raw sugar
- add 110 grams milk powder
"Blend" 30 sec/speed 10, until smooth. Scrape down sides and bottom of mixing bowl with spatula.
- add 150 grams of butter
- add 32 grams of brown sugar
- add 2 tablespoons of golden syrup
"Closed lid" 5 min/80°C/speed 3
- cook until melted and combined. pour over the base layer
- Crumble the remaining oaty mixture lightly over the caramel layer.
- Place the slice in the oven and bake for 15 minutes.
- Remove from the oven and allow it to sit for 5 minutes to form a skin on top of the caramel.
- Return to the oven and bake for another 25-30 minutes, until the edges are golden and the crumb topping is golden all over.
- Allow the slice to cool in the tin, then refrigerate to set the caramel.
Once set, slice and store in the fridge for best results.
