Ingredients

Oaty Caramel Slice / Chelsea Winter

  • 250 grams Butter, cubed, at room temperature
  • 200 grams brown sugar
  • 2 tsp vanilla essence
  • 200 grams flour
  • 1 tsp baking powder
  • 200 grams rolled oats
  • 65 grams dessicated coconut
  • 1/4 tsp salt

Condensed milk

  • 40 grams unsalted butter
  • 125 grams water
  • 180 grams raw sugar
  • 110 grams milk powder
  • 1 pinches salt

Caramel

  • 1 portions sweetened condensed milk, made in previous step
  • 150 grams Butter
  • 32 grams brown sugar
  • 2 tablespoons golden syrup

Recipe's preparation

    Preheat the Oven
  1. Preheat your oven to 160°C (regular bake). Line a 20x20 cm or 20x30 cm slice tin with baking paper, making sure it fits well around the corners and up the sides.
  2. Make the Oaty Base and Topping
  3. weigh 250 grams of butter cubed
  4. add 200 grams brown sugar
  5. add 2 tsp vanilla essence
  6. Blend"Blend" 30 sec/speed 4
  7. add 200 grams of flour
  8. add 1 tsp baking powder
  9. add 200 grams of rolled oats
  10. add 65 grams dessicated coconut
  11. add 1/4 tsp of salt
  12. Blend"Blend" 10 sec/speed 4
  13. scrape down the sides
  14. Blend"Blend" 15 sec/speed 4

    mixture will be crumbly - mix more if needed.
  15. Press about 2/3 of the oaty mixture into the base of the prepared tin and set aside. (leave 1/3 to crumble on top of caramel layer later)
  16. Make the Condensed milk and Caramel
  17. place butter and water into mixing bowl and 3 min/120°C/speed 2
  18. Add a pinch of salt and 180 grams raw sugar
  19. add 110 grams milk powder

    Blend"Blend" 30 sec/speed 10, until smooth. Scrape down sides and bottom of mixing bowl with spatula.
  20. add 150 grams of butter
  21. add 32 grams of brown sugar
  22. add 2 tablespoons of golden syrup
  23. Closed lid"Closed lid" 5 min/80°C/speed 3
  24. cook until melted and combined. pour over the base layer
  25. Crumble the remaining oaty mixture lightly over the caramel layer.
  26. BAKE
  27. Place the slice in the oven and bake for 15 minutes.
  28. Remove from the oven and allow it to sit for 5 minutes to form a skin on top of the caramel.
  29. Return to the oven and bake for another 25-30 minutes, until the edges are golden and the crumb topping is golden all over.
  30. Cool and Serve
  31. Allow the slice to cool in the tin, then refrigerate to set the caramel.
    Once set, slice and store in the fridge for best results.
