
Ingredients
Mom's Perfect Sponge Cake
- 200 g almonds
- 3 eggs
- 100 g Coconut sugar, or 80g normal sugar or 5 pitted dates
- 1 tsp baking powder, use gluten free if needed
- 0.4 l cream, whipped, whipping cream, unwhipped for topping
- fruit, of choice for topping

- Add almonds and blend 30sec speed 10, or until finely milled. Move to separate bowl.
- Add eggs and sugar, blend at speed 4 until foamy.
- Add baking powder to almonds.
- At speed 1, slowly add almonds & baking powder to egg and sugar mixture. Once combined, stop.
- Preheat oven to 170°C (fan).
- Add dough to lined and/or greased (round) baking tin. If using round bake tin, aim for a diameter of 20cm (ish).
- Bake for ca. 20min until golden brown.
- Once cake has cooled, prep your whipped cream. Insert butterfly whisk to mixing bowl, add cream and whisk at speed 4 until stiff. Be careful not to overwhip the cream, otherwise you'll have butter
- Top cooled cake with whipped cream and top with fresh fruit.
Optional: add nut butter to the sponge cake before adding whipped cream.
Tip
When using normal sugar, the dough will turn out relatively runny. If using dates, or date/coconut sugar, the dough will come out thicker with a hint of marzipan.
This recipe is wheat, gluten and refined sugar free and the perfect recipe for any recipe that requires sponge cake. But whipped cream & fruit is amazing!!
