Ingredients
Hot Cross Pancakes
- 20 g Butter
- 1 egg
- 40 g rolled oats
- 2 level tbsp Marmalade
- 200 g buttermilk
- 135 g plain flour
- 1 level tsp ground cinnamon
- 1 level tsp mixed spice
- ½ level tsp bicarbonate of soda
- 1 level teaspoons baking powder
- ½ level tsp salt
- 80 g mixed dried fruit
- extra butter for cooking
- fresh fruit for serving
- cream, icecream or yoghurt for serving

- Place 20 g butter in mixing bowl.
- Place 1 egg in mixing bowl
- Place 2 level tbsp marmalade in bowl.
- Add 40 g rolled oats to bowl
- Add 21 g buttermilk to bowl
- Add 135 g plain flour to bowl
- Add 1 teaspoon ground cinnamon to the bowl
- Add 1 teaspoon of mixed spice to the bowl
- Add ½ teaspoon bicarbonate soda to the bowl
- Add 1 teaspoon baking powder to the bowl
- Add ½ teaspoon salt to the bowl
- Mix 7 Seconds, Speed 7
- Add 80 grams dried mixed fruit to the bowl
- Mix 5 Seconds, Speed 3 Reverse
- Heat ½ teaspoon of the extra butter in a large frying pan and drop in 2-3 tablespoons of batter (or cook 2-3 smaller pancakes in one batch).
Once the surface of the pancake is covered in small bubbles, flip it over and cook on the other side until well-cooked through.
Serve the pancakes with fresh fruit and cream, icecream or yoghurt on top.

Tip
If you don't have Buttermilk, use milk with a teaspoon of lemon juice or vinegar, or plain milk. Dairy free milk should be fine. Dairy free butter should be fine. Gluten free flour should be fine. If you don't have marmalade, add a teaspoon of finely grated orange rind.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
