Ingredients

Glühwein / Mulled Wine Syrup

  • 4 sticks cinnamon
  • 2 star anise
  • 1 tsp cloves
  • 1 tbsp allspice berries
  • 1 tbsp coriander seeds, optional
  • 4 oranges, organic; 4 strips of peel, approx. 1 x 4 cm each, thinly peeled, and juice, freshly squeezed
  • 2 lemons, organic; 2 strips of peel, approx. 1 x 4 cm each, thinly peeled, and juice, freshly squeezed
  • 600 g raw cane sugar
  • 100 g red wine, dry

Recipe's preparation

    Mulled Wine Syrup (750ml)
  1. Prepare the spices and peel:
    Place the cinnamon sticks, star anise, cloves, allspice, coriander seeds (optional), orange peel, lemon peel, and raw cane sugar into the mixing bowl.
    Chop for 10 seconds | Speed 10.
    Scrape down the mixture with a spatula.
  2. Add juice and wine, then reduce:
    Add the freshly squeezed orange juice, lemon juice, and red wine (100 g).
    Place the simmering basket on the mixing bowl lid as a splash guard.
    Cook for 20 minutes | 100°C | Speed 1.5.
  3. Let it infuse:
    Pour the syrup along with the spices into a container, cover, and allow to infuse overnight.
    Clean the mixing bowl.
  4. Strain and reheat:
    Strain the syrup through a fine sieve and pour it back into the mixing bowl.
    Heat for 5 minutes | 100°C | Speed 1.
    Pour the finished syrup into a hot sterilized bottle (0.75 l) and seal tightly.
  5. Storage: Store the syrup in the refrigerator and use as needed.

Tip

1) Infusion: If you don't have the time to let the syrup infuse over night, simple skip this step and proceed to the next. The syrup will still have an intense flavour.
2) Reduction: Extend the reduction time if needed to reach desired consistency.
