Gluten free Carrot loaf
- 2 gluten free flour, 2 cups
- 3 carrots, grated
- 113 grams Butter, softened
- 2 eggs, large
- 100 grams sugar
- 1 level teaspoons baking powder
- 1 level teaspoons baking soda
- 1 level teaspoons salt
- 1 level teaspoons ground cinnamon
- 1/2 level tsp ground nutmeg
- 1/4 level tsp ground ginger
- 80 grams dried fruit, mixed, cranberries, rasins or cherries
- 40 gram walnuts, optional

- pre heat oven to 180 C, grease a loaf tin.
- in the mixing bowl add flour, sugar,baking powder, baking soda,salt, cinnamon,nutmeg and ginger.
mix on speed 4 for 5 seconds. - add melted butter, eggs.grated carrots, and dried fruit, mix on speed 4 until well combined about 10 seconds
- pour the batter into prepared loaf pan, bake for 45- 50 minutes or until toothpick comes out clean.
- let the loaf cool in pan for 10 mins before transferring on to wire rack.

to use the thermomix ti grate the carrots place chopped carrots into the bowl and chop for 5 seconds on speed 5
