FRUIT LOAF

  • 300 gram White bread flour
  • 300 grams Wholemeal Bread Flour
  • 2 teaspoons bread improver
  • 2 teaspoons salt
  • 3 teaspoons sugar
  • 1 tablespoons mixed spice
  • 1 tablespoons cinnamon
  • 1 teaspoons ground nutmeg
  • 300 grams fruit medley
  • 450 grams water
  • 1 tablespoons dried instant yeast
  • 1 tablespoons oil

Recipe's preparation

    Mixing your bread
  1. Add 400grams tap water to bowl of Thermie, sugar and dried yeast. 1 minute, 37 degrees, Sp 2 (THIS IS NOT ALL THE WATER)
  2. Add white and wholemeal flour, bread improver, salt, mixed spice, cinnamon, nutmeg, and oil. Knead for 3 minutes. NOTE: Remove measuring cup halfway through dough mode and see if mixture is looking a bit dry. Add remaining 50grams water if needed.

    Add 300g fruit medley and knead 1 minutes
  3. Tip bread mix into plastic bowl that has been sprayed with Canola (tips dough out more easily later). I cover with a plastic shower cap, but plastic bag/glad wrap will do. Leave to rise until doubled in size. Time varies depending on heat, but usually an hour.
  4. When doubled in size, tip onto lightly floured board/thermomix mat and shape into a loaf. Put into bread tin (I punch it down!) and allow to double in size. Whilst bread is doing second rise, preheat oven to 200C fan bake.
  5. When doubled in size place into hot oven for 30 - 35 minutes. Should sound hollow when tapped. Run a knife around edge of loaf and tip onto cake cooler. I run the knife around as sometimes a bit of fruit has stuck to the side of the tin, even in the most seasoned of tins.

Tip

THIS BREAD CAN BE MADE WITH ALL WHITE BREAD FLOUR, OR RYE INSTEAD OF THE WHOLEMEAL OR A COMBINATION OF ALL 3. TOTAL NEEDS TO BE 600GM . NOTE THERE DOES NEED TO BE AT LEAST 150GM WHITE FLOUR.
