  • 2 lemons
  • 250 grams sugar
  • 145 grams oil
  • 2 eggs
  • 250 grams plain yoghurt
  • 340 grams self-raising flour
  • 1/2 teaspoons salt

Recipe's preparation

    Preheat oven to 180 degrees
  1. Using vegetable peeler, peel rind from 2 lemons and add to Thermomix bowl. Add 150g sugar with lemon rind and 5 sec/sp 6. Scrape down sides of bowl.
  2. Add 100g sugar 145g oil and 2 eggs and 9 sec/sp 5
  3. Add salt, 3 teaspoons lemon juice, 250g yoghurt and 340g self raising flour.
  4. Mix 7 seconds sp 5. Check all ingredients just combined, don't over mix.
  5. Pour into oiled/floured ring tin. Bake approximately 30 minutes. Use sensor if you have one. (96c internal temperature)
