JUMBO FRUIT BISCUITS
- 125 g Butter
- 100 g caster sugar
- 100 g brown sugar
- 1 egg
- 1 teaspoons Vanilla Paste
- 210 g plain flour
- 1 teaspoons bicarbonate of soda
- 225 g dates
- 65 g dried apricots
- 56 g dried apples
- 50 g rolled oats
- 50 g macadamia nuts, halved
- 70 g pepitas

- Put dates, apricots, apples into Thermomix and chop 20 seconds speed 5. Remove from bowl and put into mixing bowl, don't wash.
- Add egg, caster sugar, brown sugar to Thermomix and blend 20 seconds speed 5.5
- Add egg, 20 seconds speed 5
- Add flour and bicarb soda and mix 10 seconds speed 4.
- Remove mixture into bowl with chopped fruit, then add pepitas, rolled oats and halved macadamias.
Mix with wooden spoon to combine ingredients. (TRIED IN THERMI BUT TOO HARD ON MOTOR!)
Roll into tablespoon size balls and place on oven tray and press down slightly.
Bake 15 minutes
Preheat oven to 180 degrees
