Paleo Pumpkin Scones

  • 200g almond
  • 280g Pumpkin purée
  • 150g Maple syrup
  • 100g honey
  • 6 eggs
  • 90g coconut oil, Melted and cooled
  • 2 teaspoons vanilla
  • 1.5 teaspoons cinnamon
  • 3 teaspoons Pumpkin spice
  • 130g Coconut Flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Recipe's preparation

  1. 1. Preheat oven to 170°C and line two large trays with baking paper.
    2. Mill almonds 10sec/sp7 and set aside in separate bowl.
    3. Combine all wet ingredients into bowl and mix 20sec/sp5, scrape down.
    4. Add dry ingredients including almondmeal, mix 20sec/sp5.
    5. Scrape down and dislodge any dry almondmeal from the bottom of the bowl and mix again 10sec/sp5.5
    6. Allow to rest for a minute or so while the coconut flour firms up the dough.
    7. Using a spatula or your hands form a flat round of dough onto lined tray about 2cm high, 20cm wide. Continue three more times until all dough is used up.
    8. Bake for 12-15 minutes and allow to cool on trays before cutting into wedges.
    9. Serve with jam and cream and berries if desired.

Tip

*I make my own pumpkin spice blend to keep in the pantry, great on porridge or cookies and waffles too!
Just mix equal parts of ground cinnamon, ground ginger, ground nutmeg, ground all spice and half the amount of ground cloves in a jar and store.
*This scone recipe makes enough so you can take to a friends place and maybe leave some at home for the kids afternoon tea.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
