Ingredients

Base

  • 125 g Butter, cut into cubes
  • 170 g Self Raising Flour
  • 100 g caster sugar
  • 85 g Coconut

Topping

  • 400 g Tin condensed Milk
  • 1 lemon, small, peeled, quartered & deseeded
  • 2 pulp of passionfruit

Recipe's preparation

    To Make The Base
  1. Heat oven to 180C

    Melt butter for 2mins/80C/speed 3.  Add the remaining ingredients for the base & mix for 5 secs/speed 4.

    Scrape down & mix again for 5 secs/speed 4.  Press the mixture into a lined lamington tin & bake for 15mins or until lightly browned.  Allow to cool.

     

  2. To Make the Topping
  3. Place the lemon in the TMX & chop for 10 secs/speed 7.  Add the condensed milk & passionfruit & mix for 10 secs/reverser/speed 5.  Pour over the cooled base & cook for a further 10 mins.

    Absolutely delicious. Very easy slice to make. A great morning tea slice to bake to take to work, for visitors etc. Using a small whole lemon is genius. No squeezing lemons to make juice!

    Made this as I was looking for a recipe to use up some of our Passionfruit. I cooked both the base and topping for longer than suggested and it turned out perfectly. This was amazing and everyone loves it!

    Yes yes YES!!!!! the icing on this is orgasmic!!
    I didn't bother with the lemon, as we have a truck load of passionfruit to use here in QLD, so used passionfruit and condensed milk only.... and OMG.... thee best icing ever!!!! Thank U 4 this Amanda!
    (also swapped the coconut for oatbran, as my kids not that partial to coconut....it gets stuck in their braces!)

    These were delightful and did not last long at all in our house.
    I didn’t have any fresh passion fruit, so used tinned pulp and it still turned out beautifully. After reading some other comments I think next time we may try them with some mango as well as passion fruit.
    I also changed the use of a whole lemon to half a cup of lemon juice as I didn’t want the bitter taste.
    These were a hit so will be making them again for sure!
