Ingredients

  • 5 fresh peaches, halved and destoned
  • 60 g rolled oats
  • 80 g unbleached plain spelt flour
  • 80 g light brown sugar
  • 100 g unsalted butter
  • 30 g Shredded coconut
  • 1 tsp ground cinnamon
  • 70 g walnuts

Recipe's preparation

  1. Preheat oven to 180°C. Place peach halves cut side up into baking dish and set aside.

  2. Place all remaining ingredients except walnuts into mixing bowl and pulverise 6-7 sec/speed 7 until mix resembles breadcrumbs. 

  3. Add walnuts and pulse two to three times 1 sec/Closed lid"Closed lid" /Turbo until nuts are just broken-up.

  4. Mould approximately 1 tbsp of the crumble mix (as much as it can take) onto each peach half. If you find the crumble mix is not sticking together and holding shape simply add a little more butter (or some grapeseed or almond oil) until mix begins to form.

  5. Bake for approximately 20-30 minutes or until crumble is lightly golden and peaches are just soft to touch. Allow to cool a little before serving.

Tip

This recipe can also be used with pears instead of peaches, perfect for the cooler months. Bake for 30-40 mins to ensure pears are cooked through.
