Ingredients

  • butter for greasing
  • 400 g Boiling water
  • 300 g caster sugar
  • 1 tsp Vanilla Bean Paste
  • 80 g poire William eau de vie (Pear Liqueur), optional
  • 3 ripe Beurre Bosc pears, peeled, sliced in half, seeds and core removed
  • 140 g hazelnuts
  • 180 g softened butter, cut into pieces
  • 2 eggs
  • 3 tbsp Milk
  • 150 g plain flour
  • 1 tsp Baking Powder.
  • Vanilla ice cream to serve

Recipe's preparation

    Method
  1. 1. Grease 6 shallow dishes with butter and set aside. Preheat oven to 180C (fan forced).

     2. Place boiling water, 200g caster sugar, vanilla bean paste and Pear liqueur if using, in mixing bowl.

    3. Place peeled pears in Varoma basket and place into position. Cook syrup and pears 25 min/Varoma/speed 3.

     4. Meanwhile, place hazelnuts on an oven tray and roast, shaking occasionally, until browned (about 10 minutes). Rub with a tea towel to remove skins and set aside.

     5. Remove pears from basket and place in a Thermoserver. Drizzle over syrup and cover with Thermoserver lid. Clean and dry mixing bowl.

     6. Place 100g roasted hazelnuts in mixing bowl and mill 8 sec/speed 7. Add butter and 100g caster sugar and mix 2 min/speed 3. Add eggs, milk, flour and baking powder and mix 20 sec/speed 3.

     7. Thinly slice steamed pears. Divide batter between dishes and top with sliced pears. Bake 20 minutes or until golden.

     8. Coarsely crush remaining hazelnuts with the flat of a chef’s knife. Scatter over pears, drizzle with syrup and serve with vanilla ice cream.

Tip

Try substituting Granny Smith apples for pears.
