Ingredients

Aquafaba Chocolate Mousse

  • 150 gram Dark chocolate (70% cocoa), broken into pieces
  • 150 gram drained and reserved liquid (aquafaba) from 420g can chickpeas
  • 1 tablespoon caster sugar, optional

Recipe's preparation

    Method
  1. 1. Place chocolate pieces in mixing bowl and grate 5 sec/speed 8.
    2. Scrape down sides of bowl with spatula and melt 4 min/50C/speed 2.
    3. Transfer melted chocolate into a large bowl and set aside. Thoroughly clean and dry mixing bowl.
    4. Insert butterfly whisk, add reserved liquid to the mixing bowl and whisk 4 min/speed 4 or until very stiff. If adding sugar, remove measuring cup and continue to whisk 30 sec/speed 4 while slowly adding sugar.
    5. Remove butterfly whisk. Using a large metal spoon, stir in about a third of the whipped aquafaba to the melted chocolate - this is known as "slackening" the mixture and you can afford to be a little vigorous at this stage.
    6. Now gently and carefully fold in the remaining whipped aqafaba using an up and over motion with your spoon to combine the slackened mixture into the foam without losing too much of the incorporated air.
    7. Divide between serving bowls then place in the refrigerator to chill for at least 3 hours before serving.
    8. Serve with a little whipped cream or coconut cream, chopped nuts or berries

Tip

The reserved liquid from canned chickpeas is called Aquafab (Aqua means Water, and Faba means Beans). Food scientists in India discovered aquafaba makes a great substitute for whipped egg whites in recipes and is a great way to utilise a sub-ingredient that would otherwise be discarded.

Use Dairy Free chocolate as a lactose and dairy free alternative and for Vegan diets

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
