Ingredients
Chai Spice Hot Cross Buns
- 250 g Boiling water
- 2 Chai teabags
- 200 g dates, pitted
- 1 small orange, peel only
- 400 g white spelt flour
- 2 sachets dry yeast
- 200 g wholemeal spelt flour
- 1 egg
- 70 g Butter, cut into cubes
- 1 1/2 tsp ground cinnamon
- 2 tsp mixed spice
- 50 g Raw Honey
- 100 g raisins
- --- warm honey to glaze
Piping
- 100 g white spelt flour
- pinch salt
- 1 tsp olive oil
- 100 g water

1. Place boiling water in a bowl with the chai teabags. Add dates and allow to soak for 20 minutes, or until dates are soft.
2. Add orange peel and 100g white spelt flour and mill 10 sec/speed 9. Transfer to a bowl and set aside.
3. Remove teabags and place soaked dates and reserved tea into mixing bowl. Mix 3 sec/speed 5.
4. Sprinkle over dry yeast and heat 3 min/37C/reverse/speed 1.
5. Add remaining 300g white spelt flour, wholemeal spelt flour, egg, butter, cinnamon, mixed spice, honey and reserved flour and mix 6 sec/speed 7. Scrape down sides of bowl and knead 2 min/ knead function.
6. Add raisins and mix 10 sec/revers/speed 5.
7. Line a baking tray with baking paper and set aside. Preheat oven to 220C.
8. Transfer dough onto a Thermomat and work into a ball. Wrap dough in Thermomat and leave to prove in a warm place until doubled in size (about 40 minutes).
9. Knock down the dough and divide into 12 equal-sized pieces. Form into rolls and place close together on prepared tray. Leave to prove for a further 20 minutes while you make the piping mixture.
10. For the piping, place ingredients in the mixing bowl and mix 30 sec/speed 4.
11. Spoon into piping bag and pipe crosses over the buns. Bake at 220C for 5 minutes and then 200C for 15 minutes, or until golden brown and hollow when tapped.
12. Brush with warmed honey.

Made them 2 times now- but not for Easter so I just drop the cross. Really lovely and spice aroma.
