Ingredients

Muffins

  • 825 g can of pear halves, drained
  • 250 g Self Raising Flour, shifted
  • 65 g brown sugar
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1 egg, lightly beaten
  • 80 g vegetable oil
  • 60 g frozen raspberries

Recipe's preparation

  1. Preheat oven 180ºC or 160ºC fan forced.

    Lay out 16 patty pans

    Puree pears in thermo bowl, 5 sec, speed 7.

    Scrape down sides of bowl.

    Add dry ingredients, egg and oil to bowl with puree.  Mix 5 sec, speed 4, scrape down sides of bowl and repeat 5 sec, speed 4.

    Add raspberries, mix 5 sec, speed 4, Counter-clockwise operation"Counter-clockwise operation" .

    Fill patty pan cases.

    Bake for approx 20 mins until cooked when tested.

    Cool.

    Store in an airtight container.

    Needed to use up some fresh pears (approx 500grams) reduced sugar to 50 grams. Didnt have frozen raspberries so used frozen blueberries instead.
    Not overly sweet and nice with a cuppa. Kids enjoyed them but said the chocolate muffins I make in the thermie are better Wink

    Yummy but reduced sugar to 40 grams. Added teaspoon of cinnamon. Used 4 pears,skin on, cores removed.

    Just made this for my kids lunch boxes but made it gluten free and dairy free using coconut oil and gluten free self raising flour
