- 340 grams almonds, raw
- 200 grams sugar eg coconut
- 60 grams coconut, dessicated
- half portion whole nutmeg
Wet ingredients
- 200 grams butter, from fridge
- 4 eggs, free range
- 50 grams Maple Syrup, pure
- 2 level teaspoons vanilla extract, natural
Centre and decoration
- 2 firm, ripe pears, Packenham
- 100 grams chocolate buttons, dark

I'm cooking this todayRecipe's preparation
1. Preheat oven 170 degrees celsius
2. 200 gm butter, 60 degrees, 3 1/2 mins (set aside to room temperature), clean thermomix bowl
3. weigh 100 gm choc buttons, set aside
4. Line medium round cake tin
1. Half nutmeg, 8 sec, speed 9
2. Add 200 gm sugar, 3 sec, speed 9
3. Add 340 gm almonds, 8 sec, spped 9
4. Add 60 gm dessicated coconut
5. Set aside these dry ingredients
1. Insert butterfly
2. Add all wet ingredients ( including room tempreature butter), 1 min, speed 2
3. Add dry ingredients to wet ingredients, 2 mins, "Counter-clockwise operation" (to combine ingredients)
1. Pour half mixture into cake tin
2. Place pear slices (keep aside 6 slices for decoration) on top, in circular fashion
3. Sprinkle 75 gm choc buttons over mixture in cake tin
4. Add remainder mixture to cake tin
5. Decorate the top with remaining 6 pear slices, and 25 gm choc buttons
1. Place in pre- heated oven 1 hour and 15 mins
2. Enjoy this moist cake !

Really nice recipe. Next time I will try reducing butter just found it too moist but a hit in the family. Thank you 😊
Really tasty, thanks. Mine needed a lower temp when cooking though and for a little longer as mine burnt on outside and wasnt cooked in the middle. Also next time I need to blend the almonds for longer as the texture was a bit bitsy. I also just used ground nutmeg and it tasted perfect thanks.

Yes, one (or two ! ) slices a serve is fine! This cake may be sliced and portions frozen for future decadence !
