Ingredients

Plum Cobbler

  • 750 g fresh blood plums, quartered or halved
  • 60 g caster sugar
  • 125 g self-raising flour, Topping
  • 60 g plain flour, Topping
  • 60 g caster sugar, Topping
  • 125 g Butter, diced
  • 1 egg, topping
  • 120 g Milk, topping
  • icing sugar, For dusting at the end

Recipe's preparation

    Preperation
  1. - Preheat the over to 180 degrees celcius.
    - Prepare a 2 litre overnproof dish.

  2. Fruit Base
  3. - Place plums (including juice) and 60g caster sugar in the TM bowl and Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" for 5 minutes on 75 degrees.
    - Check sugar dissolved. Use longer if required.
    - Place fruit base in the prepared dish.
    - Clean TM bowl and dry well.

  4. Topping
  5. - Place the two flours and sugar in the bowl and mix at speed 4 for 3 seconds.
    - Add the butter and mix on speed 6 for 5 seconds. It should be a bread crumb consistency.
    - Add the egg & milk and mix at speed 5 for 3 seconds. It should be a smooth consistency.
    - Use the spatula to place large spoonfuls of dough mixture on top of the fruit base.

  6. Baking & Final Steps
  7. - Bake for 30-40 minutes or until the cobbler topping is golden & cooked through.
    - Remove from over & dust with icing sugar.
    - Serve immediately. (Ideal with cream or ice cream).

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     thanks for the recipe!
    the cobbler mix was DIVINE, so light and fluffy! Could you use this as a cupcake batter as well, with a bit of vanilla?
    I sprinkled a bit of extra castor sugar on the top after cooking, instead of icing sugar, for that bit of extra (naughty) sweetness tmrc_emoticons.-|
