Shortcake Base

  • 340 grams self-raising flour
  • 200 grams raw sugar
  • 125 grams Butter, softened
  • 2 eggs

Lemon Butter

  • 125 grams lemon juice
  • 200 grams raw sugar
  • 2 eggs
  • 125 grams Butter, roughly cut

Recipe's preparation

    Shortcake Base
  1. Preheat oven to 160*C,

    Line cake tin with baking paper (scrunch to help with corners or round tin as necessary)

    Combine all ingredients in TM bowl 1min/Dough mode"Dough mode"

    Tip the shortcake base into a bowl to prep while lemon butter is cooking.

     

  2. Lemon Butter
  3. Insert buterfly whisk.

    Combine lemon juice, sugar, eggs and butter in TM bowl and cook 8 min/80*C/speed 3

    MEANWHILE: Press 2/3 of the mixture into cake tin to form the base 

    After 8 minutes, test to see if the setting point of the lemon buttter has been reached by inserting a teaspoon; the mixture should coat the back of the spoon in a thick layer.  If not set, cook until desired consistency/80*C/speed 3.

    Pour the lemon butter over the shortcake base and crumble remaining 1/3 of shortcake dough over the top.

    Bake for about 45 minutes.

    Cool in tin

    Dust with icing sugar to serve

This recipe was adapted from the lemon cake wich features in The Forgotten Pearl by the fabulous Australian children's author Belinda Murrell.  I have always dreamed of including this cake in a Book Week feast at school, or as a gift for anyone who loves to read.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
