Pumpkin Baked Oatmeal

  • 200 grams rolled oats
  • 1 teaspoons baking powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoons cinnamon
  • 1/2 teaspoons sea salt, optional
  • 350 grams Milk of choice, I use oatmilk
  • 260 grams Pumpkin purée, no added sugar
  • 85 grams Pure Maple Syrup, more for serving
  • 1 egg, replace with ground flaxseed for vegan alternative
  • 1 tablespoons coconut oil, melted
  • 1 teaspoons vanilla extract
  • 70 grams pecans or wallnuts, chopped

Recipe's preparation

  1. Preheat oven to 190°C. Spray a baking dish with cooking spray
  2. Add dry ingredients (oats, baking powder, pumpkin pie spice, cinnamon, nuts and salt) to the mixing bowl and mix 6 seconds speed 3
  3. Add wet ingredients (milk, pumpkin, maple syrup, egg or flaxseed, coconut oil and vanilla) to the dry ingredients and mix 30 seconds speed 4
  4. Bake for 30 to 35 minutes, until the top is golden and the center is set. remove from the oven and let cool for a few minutes before serving.

Tip

For storage/ store in the refrigerator in an airtight container for up to 4 days
To reheat: To reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set oven (or toaster oven) to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.
Serve with greek yoghurt and drizzle with maple syrup if you want it extra sweet.
