Ingredients

Biscuits

  • 125 grams Butter, Softened
  • 100 grams raw sugar
  • 5 grams vanilla
  • 1 egg
  • 310 grams plain flour

Ganache

  • 50 grams thickened cream
  • 180 grams white chocolate
  • 5 grams vanilla
  • Food colouring

Recipe's preparation

    Biscuits
  1. Place sugar in mixing bowl and mill 10sec/speed 9.  

    Add butter  and vanilla into mixing bowl and mix 2mins/speed 6.

    Add egg and with blades rotating on speed 3, gradually add flour then knead 30 sec/Closed lid"Closed lid" /Dough mode"Dough mode" .

    Wrap dough in plastic and refrigerate for 30 mins until firm.

     

    In a clean bowl, add white chocolate and mill 10 sec/speed 9.

    Add creamand vanilla and melt 2-3min/50degrees/speed 3.

    Divide into 5 bowls and add a few drops of food colouring to each bowl.  Set aside to cool at room temp for one hour.

     

    Preheat oven to 160degrees.  

    Line two trays with baking paper.

    Roll dough between two sheets of baking paper until 5mm thick.

    Using 5cm cutter, cut into rounds.  Arrange on trays.

    Bake 10-12 mins until golden.  Cool on rack.

    Sandwich with 1 teaspoon of ganache.
