Ingredients
- 60 g almonds
- 110 g sugar
- 170 g Butter
- 220 g SR flour
- 2 eggs
- 70 g Milk
- 1 tsp Vanilla Essence or Paste
- 120 g white chocolate, roughly chopped into small chunks
- 340 g fresh or frozen (not thawed)( raspberries
- Icing Sugar to Dust
- extra raspberries for decoration - optional

Preheat Oven 180C.
Grind almonds 10 Seconds speed 9.
Add sugar and butter. Mix 30 seconds speed 4/5. Scrape down.
Add SR flour, eggs, milk and vanilla. Mix 30 seconds speed 4/5 until combined.
Add white chocolate chunks and raspberries. Stir through by hand as batter is quite thick.
Bake in prepared tin, 75 minutes.
Tip
We love this cake so much, I made it for our wedding cake! Ive since adapted the recipe to make it in the thermomix.
