Ingredients
- 1 egg white
- 1 tsp cold water
- 460 grams almonds, (or 4 cups)
- 60 grams Coconut sugar, (any course grain sugar will work)
- 1 pinch Himalayan salt, (or any salt)
- 1/2 teaspoon ground cinnamon

Almonds do not HAVE to be activated - it is my personal preference only. Raw almonds can be used. If you would like to activate the almonds first, soak them in lightly salted water for a minimum of 6 hours - they can then be strained and used wet. Or you can used dry previously activated almonds.
Preheat oven to 150 degrees
With the butterfly in place, add the egg white to the bowl and lightly beat it at Sp4, 40 secs. Scrape down sides of bowl.
Add cold water and beat for a further 10 seconds at sp 4 till frothy.
Add nuts to the bowl. On "Counter-clockwise operation" , combine with the egg white mixture on sp1 for 10 secs. Scrape down the sides and repeat.
Add sugar, salt and cinnamon to the bowl. Still on "Counter-clockwise operation" , mix on sp 1 for 10 seconds. Scrape down the sides and repeat
Spread evenly on a prepared pan (tray lined with wax paper) and bake for 1 hour, stirring every 15 minutes. Allow to cool completely before separating/breaking apart, eating or packaging, as they will not crisp up until completely cool
Activate the almonds
Prepare the almonds for roasting
Tip
For a savoury twist, omit the cinnamon and sugar, add a tsp curry powder and an additional 1/2 tsp salt.

This smelled so delicious while baking! I didn't activate the almonds first, which may account for why my batch was slightly overcooked after the 1hr at 150℃. Such a shame because I had wanted to pack these as Xmas gifts! I will definitely try it again, but might pull the nuts out of the oven by 45-50mins. Thanks for the recipe!
