  • 165 gram sugar
  • 150 grams self-raising flour
  • 125 gram sultanas

Recipe's preparation

    Adapted from Matthew Evans - Winter on the Farm cookbook
  1. Preheat oven to 180degrees Celsius. Grease a 28x18cm baking tin and line with baking paper

  2. Closed lid"Closed lid" Weigh in butter and golden syrup to TM bowl, then melt - apx 2min/80deg/speed 2.

  3. Closed lid"Closed lid" Add to bowl coconut, sugar, flour, sultanas and the egg. Mix for 30 sec/speed 4/reverseCounter-clockwise operation"Counter-clockwise operation"

  4. Tip into the prepared tin and bake for 20-30 mins at 180°c until golden.

  5. Allow to cool in tin, then cut into small squares, and serve.

    Great with a cuppa tea on a cold winter day.

Tip

This recipe works well gluten free - just swap the regular SR flour for a good quality gluten-free self-raising flour (I prefer White Wings, or the Woolworths gluten-free flour blends.)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
