Cheese cake mass

  • 500 g quark, low fat, European chottage cheese (get at Aldi/Woolies)
  • 75 g sugar
  • 1 teaspoons natural vanilla extract
  • 3 egg yolks
  • 40 g cornflour (starch)
  • 100 g vegetable oil, neutral taste like sunflower oil
  • 3 teaspoons lemon juice
  • 250 g full cream milk

Merengue topping

  • 3 egg whites
  • 100 g sugar

Recipe's preparation

  1. Dear baking friends - due to some glitch in the system it just will not save the ingredients for the cake base. Therefore I give you the ingredients here:
    100 g sugar
    300 g baker's flour
    2 teaspoons baking powder
    1 teaspoon vanilla essence
    2 eggs
    100 g nonsalted butter

    Take round cake form (springform) 28in and grease (use seperator agent https://www.recipecommunity.com.au/basics-recipes/separator-agent-slides-cakes-out-of-pans/ru7acd3j-f343c-471830-beea0-gbh42m5b).
    Preheat oven to to 180 degree C top and bottom heat.

    Put all cake base ingredients into Closed lid"Closed lid" 20 sek/speed 4.
    Spread the dough base into the form, press down with fingers and slide up the sides to create the shell. If you are using canned mandarins, open them and let the juice drop off.

    Use all ingredients of the Cheese cake mass 10 sec/sp 4. You can spread the mandarins on the base (optional) and fill the shell up with cheese cake mixture.

    Bake for 45 minutes in 180 degree heat, then check the oven. If the top is already browning put aluminium foil over the cake for the last 15 minutes to bring it to one hour baking time. The cake will still be wobbly in the center, but that will set during cooling.

    Make a merengue by putting sugar and egg whites into Closed lid"Closed lid" with whisk / speed 3 until peaks have formed. The bowl can wait in the fridge for the cake to bake.

    Once the cake is done spread merengue over the cake and bake a further 10 minutes.
    If all is done leave the cake out to dry and cool. The tears will form by liquid sugar being pressed out by escaping steam.
    If you want the tears to be in a certain pattern you can take a wooden skewer and prick the surface of the merengue a couple of time. Usually the tears form along the base of the merengue swirls.
    Do not refrigerate until tears have set (or there will be none). This might take up to 3-4 hours. Enjoy!

    So sorry - in my version, even online, all the ingredients are visible, but in pressing "save" it only shows the first ingredient. Here are the ingredients for the cake base:

    100 g sugar
    300 g baker's flour
    2 teaspoons baking powder
    1 teaspoon vanilla essence
    2 eggs
    100 g nonsalted butter

    I will keep on trying to add the missing ingredients, but have done it six times and the platform is swallowing it every time and only showing one. Sorry about that.
