Ingredients
Batter
- 330 grams rice milk or almond milk
- 200 gram SR gluten free flour
- 2 Eggs.
- 1/2 teaspoon GF baking powder
- 2 teaspoon Rapadura suagr, optional
- 2 Bananas ripe
For frying
- Butter
- macadamia oil

1. Add all ingredients into thermomix bowl except the bananas, mix for 10 sec on speed 6. Check batter has been mixed in, if not , scrape down sides and mix for another 5 seconds.
2. Mash one banana and thinly slice the other.
3. Add both the bananas to the batter and mix on "Counter-clockwise operation" reverse speed 1 or 2 for 10 sec or until incorporated.
4. Heat a large fry pan over medium-high heat and add in 1T butter and 1T macadamia oil and spread around pan. Drop three 1/4 cupfuls of batter into pan, allowing room for spreading. (If the batter is too thick, add a little more milk and mix in). Cook for 2-3 minutes or until bubbles appear on the surface. Turn and cook for 1 minute or until golden. Repeat adding butter and oil for each batch.

Tip
These pancakes are quite filling, taste great and don't even need the suggested 2 t of sugar!
