- 225 g self rasing flour
- 225 g sugar
- 100 g Butter
- 55 g evaporated milk
- 55 g lukewarm water
- 2 medium eggs
- 1 tsp Vanilla Bean Pate

Weigh flour on top of bowl on a sheet of tin foil and add salt, set aside
Weigh in sugar., 10 seconds on speed 10,
Add 2 eggs and insert butterfly, mix with tm cup off for 6 minutes at 37 degrees , speed 3.5, set mixture aside, scrape out as much as you can, with soft spatula.
Weigh in evaporated milk, water, butter and add vanilla bean paste, put flour through a sieve straight into the tm bowl mix 20 secs speed 2-3 no cup on,
Insert butterfly whisk, , add egg and sugar mixture, whisk for 10 secs speed 4, remove butterfly and give a little stir with a metal spoon, put heaped teaspoon amounts into bun cases and bake 180 degrees fan oven for about 15 minutes, mixture makes 2 8 inch cakes to sandwich together , if not making cup cakes
Tip
Makes 24 cupcakes or 2 8inch cakes to sandwich together, took ages to perfect, hope you like it!

Lovely cake. I made this for my baby girls first birthday cake, sandwiched with some jam, cream and strawberries. It's a lovely cake, but not really a sponge cake. I made the cake the day before in two 18cm tins, then put it all together the morning of the party.

i adapted it from an old UK Bero recipe book belonging to my mum
easy to do, cooked in a tray for a large cake, was thin but held shape so quickly made a second one and sandwiched with Jam, then easy to shape and Ice.
Really good, light and very tasty. My daughter made it and put whipped cream, morello cherry jam and morello cherrys in the middle - YUM
It says to add salt in step one but doesn't say how much? Did anyone else add salt or shall I leave it out?
Split mine in two small round cake tins and coloured one for a birthday cake. Good texture and didn't sink when cooling. TaSte good too.

Glad you liked it! I don't know what a whoopie pan is, but when I have made it into a big cake I have baked it for about 30 mins, just keep testing it until a knife comes out clean
Just finished baking 2 of these cakes (2 separate batches baked in 2 deep lamington pans) I am sandwiching them together with lemon curd & cream for my son birthday cake. I must admit I was a bit sceptical of this recipe as there was no "folding" involved, but it was great, lovely & light & the real vanilla bean looks great through the mix. interesting method, will try soon. How long would the two larger cakes bake for, would 20 minutes be about right? I don't have bun cases, would a muffin top pan work?(much like a whoopie pie pan) Will let you know how I go, thanks for posting.
