Ingredients

batter

  • 100 grams Butter
  • 1 cup sugar
  • 1 tablespoon bicarb soda
  • 3/4 Cup water
  • 1 cup currants
  • 1 cup raisins
  • 1 Cup sultanas
  • 1/2 cup pitted dates
  • 1/2 cup peel
  • 1/2 cup halved cherries
  • 1/2 cup nuts
  • 2 Cups Flour
  • 1 tablespoon baking powder
  • 1.5 teaspoon mixed spice
  • 80 ml brandy
  • 2 eggs

Recipe's preparation

  1. Chop dates, 5 seconds, speed 4

     

    Melt butter with sugar and bicarb that has been diluted in the water,  2 min 30 sec, temp 60, sp 1

     

    Add fruit except for nuts and cherries and simmer gently, 5 mins, 100 deg, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

     

    Pour mixture into a thermoserver or bowl, let it cool slightly before adding brandy and letting it sit overnight or for approximately 8 hours.

     

    Prepare a square cake tin app 20 x 30 by greasing and double lining with baking paper. Turn oven to 170 degrees celsius. 

     

    Chop nuts 6 seconds, speed 4

     

    Add mixture back into bowl with nuts. Add cherries, well sifted flour, baking powder and spices. 

     

    Mix for 30 seconds, sp 3 Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

     

    Add 2 eggs, mix 30 seconds, sp 3 Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

     

    Pour into prepared tin, wrap tinfoil over the top, bake at 170 degrees for 1 hour, drop temperature down to 140 degrees for another hour. Check cake by sticking skewer into centre. If not done, continue baking at 140 checking at 10 minute intervals.

     

    Marzipan and icing make fabulous finish to this cake

Tip

If you don't have all the different fruits required, just use what you have to make up the quantity required.

 

You can vary the amount of brandy according taste (or children)

 

Use any nut you want, we use pecans. Or you can omit the nuts.

 

This cake can be made a month in advance,  wrapped in two layers of foil and 1 tablespoon of brandy poured over the cake once a week.
