Ingredients

Ultimate Chocolate Ganache

  • 820 grams milk chocolate, Break up choc as much as you can (I smack the packs on the bench a few good times): I use 50/50 milk and dark but you can use whichever to suit your taste
  • 2 tablespoons glucose or corn Syrup, For a Shiny Finish
  • 600 grams thickened cream, (equate to about 600 gms but I by coles thickened cream which somes in a 600 ml tub and just throw that in)

Recipe's preparation

    Chocolate Ganache - Ultimate!
  1. Put in Cream

    2. TM on Varoma for 4 mins Speed 1.5

    3. Then add Glucose through hole while on this speed

    4. Next add Chocolate through hole while on this speed

    5. Once choc is all in – put on MC and turn speed to 7 for about 10-20 seconds

    Done & Delicious!

    Notes:

    You can add syrups or liquor to flavour – just don’t add too much

     (You can always microwave cream then add syrup for about 2 mins – our into a food processor (but make sure you chop the chocolate in the food processor just prior to adding the cream, too early and the choc will melt, too late and you may have lumps) and process till smooth.

Tip

I use Nestle Plaistowe chocolate, I have tried just about every other one imaginable....cheap, expensive & couverture but I can't find one I like better for ganache. You can get this at most supermarkets in the cooking isle.
