Ingredients

Vanilla cupcakes

  • 125 g unsalted butter
  • 230 g caster sugar
  • 3 --- eggs
  • 1 level tsp vanilla extract
  • 270 g plain flour
  • 1 level tsp baking powder
  • 125 g full cream milk

For chocolate cakes

  • 3 level tbsp cocoa powder

Recipe's preparation

  1. Preheat oven to 180C.
    Place ceramic bowl on lid and weigh sugar. Using another bowl, weigh flour. Insert butterfly in mixing bowl.
    Place softened butter in bowl and mix 1 minute, speed 3
    While machine is running, add sugar, approx a third at a time, mixing well between each addition. (You may need to scrape down sides occasionally) Keep mixing until butter and sugar is pale, light and creamy, approx 3 minutes. With machine still running, add eggs, one at a time. Mix for roughly one minute between eggs. Add vanilla with last egg and mix for one minute. Remove butterfly and scrape down sides.
    Add approx half the flour, half the milk and the baking powder (add cocoa here if making chocolate cakes). Mix 1 minute, speed 4.
    Scrape down sides.
    Add remaining flour and milk and mix 1 minute speed 4

    Spoon mixture into 24 cup cake cases and bake approx 15 minutes
    or 12 muffin cases and bake 20-25 minutes.
    Or 10 mini loaf cakes for 20-25 minutes
    Can also be made as a cake. Not sure of baking time as I haven't tried it yet but guessing around 40-45 minutes.

Tip

After cooking many heavy, greasy, quick cupcake recipes, I decided to try convert my traditional recipe. These are light, fluffy, fine textured cupcakes like grandma used to make but, thanks to thermie, minus the elbow grease.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
