Vanilla Cake
- 120 g Butter, Roughly chopped
- 2 Eggs.
- 100 g full cream milk
- 1 teaspoon vanilla extract
- 80 g honey
- 150 g Self Raising Flour
- 1 teaspoon Baking Powder (optional)

- 1. Preheat oven to 180°C / 360°F ( or use microwave oven).
2. Grease & line a 20cm diameter round oven-safe cake tin (or grease and lightly dust with flour a silicone mold/tin for microwave method)
3. Place butter in mixing bowl and melt 2mins/60°C/speed 4."Blend"
4. Add all remaining ingredients and mix 10 secs/speed 5."Blend"
5. Scrape down sides of mixing bowl with spatula, Mix a further 10 secs/speed 5."Blend"
6. Pour prepared cake mix into prepared cake tin. Bake 25 - 35 mins or until a skewer inserted comes out clean. (Microwave method: pour batter into prepared silicone cake tin and cover tightly with cling wrap/saran film, microwave on high for 5 minutes, remove wrap and if needed microwave another minute or two.)
7. Alow to cool completely before icing or storing in an airtight container.
Easy Vanilla Cake - microwave option
Tip
Ice with your favourite icing or ganache. Cake may be sliced horizontally for jam and cream to be placed in-between the layers. Vanilla cake is so versatile and many other flavours can be created by replacing vanilla essence with other essence flavours. Food colouring may also be added but only add 1 teaspoon as to not upset the cakes balance.
