  • 75 grams Wheetbix or cornflakes
  • 120 grams Butter, Room temperature
  • 100 grams raw sugar
  • 180 grams Self Raising Flour
  • 75 grams Sultanas or cranberries
  • 30 grams linseed, Optional
  • 1 teaspoon vanilla
  • 50 grams Milk, Any ie rice,soy,cow

Recipe's preparation

  1. Add wheetbix or cornflakes to Thermomix bowl and pulse twice. Set aside in another bowl. 

    Add butter and sugar to thermomix bowl for 10 seconds on speed 5. 

    Add all other ingredients including reserved wheetbix or cornflakes mix interval speed Dough mode"Dough mode" for 1 minute. 

    Roll into small balls and press down with your fingers and then a fork for texture. I find it quicker to roll all my balls then wash my hands and with damp fingers press them all down gently onto the baking tray 2cm apart. 

    Bake in moderate oven for 15-20 minutes or until just starting to go brown.

    Works well gluten free!

    I did a straight swap for GF self raising flour. I used GF special K (but I think any cereal wwould do).

    I also used brown sugar - Just because I prefer it to white in cookies!

    I feel the butter & sugar needed to be creamed more as the sugar granules were quite crunchy in the bisvuit. Other than that, yummo. I did a mix of sultana's & choc chips.

    Beautiful!!! I made the weetbix version and added 30g chia seeds as I didn't have any linseeds. As recommended below, I also only used 70g sugar instead of 100g and they were perfect. Saving this to my favourites for sure!

    Very yummy used weetbix and only 70grams of sugar as I made then with my 18month old daughter. She loved making them into balls and squishing with a fork. Mix is not wet and sticky so great for little hands
