- 1 teaspoon vanilla extract
- 2 eggs
- 150 g Self Raising Flour
- 80 g desiccated cococnut
- 150 g raspberries, fresh or frozen

1. Preheat oven to 180°C or 160°C fan-forced. Line a slice tray with baking paper.
2. Chop butter and white chocolate for 5 sec on speed 7.
3. Melt butter and white chocolate at 50 degrees on speed 2 for 3 minutes or until melted. Scrape down the sides.
4. Add sugar and vanilla and mix on speed 3 for 10 seconds.
5. Add eggs one at a time through the hole in the lid while still on speed 3. Scrape down sides of bowl.
6. Add flour and coconut. Mix on speed 4 for 10 seconds or until combined.
7. Pour mixture into prepared tin and smooth out. Sprinkle over raspberries and push lightly into mixture.
8. Bake for 30-40 minutes or until firm. If the slice is browning too much cover with foil for the remaining time.
Tip
If you have remaining white chocolate leftover you can either eat it or chop it up and add it at step 6 with the SR flour and coconut.
