Ingredients
- 3 ripe bananas
- 1 tsp vanilla extract
- 150 grams brown sugar
- 125 grams Butter, softened
- 2 eggs
- 225 grams Self Raising Flour
- 1 tsp mixed spice
- 1/2 tsp bicarb of soda
- 120 grams sour cream
- 60 grams Milk

Preheat oven to moderate. Grease a loaf tin and then line with baking paper.
Place bananas and vanilla extract in TMX bowl. Mix 5 secs, sp 5. Set aside - no need to clean out TMX bowl.
Place butter and brown sugar in TMX bowl and mix 20 secs, sp 5.
Add eggs one at a time and combine each for 3 secs, sp 5.
Add banana mixture back into bowl and mix 3 secs, sp 5.
Add flour, bi-carb, mixed spice, milk and sour cream and mix 15 secs, sp 4.
Pour into lined loaf tin and bake for approx 50 minutes. It's done when a skewer comes out clean. Stand cake in pan for about 5 minutes before turning onto wire rack to cool further.
Delicious warm with a cuppa!
