  • 1 litre UHT milk
  • 50 grams milk powder
  • 2 tablespoons raw sugar
  • 2 teaspoons vanilla extract
  • 4 tablespoon Starter Yoghurt, From shop or saved from last batch

Recipe's preparation

    Vanilla Yoghurt
  1. Add all ingredients except starter yoghurt and hear 12mins, 37deg speed 3 (you probaby dont need to heat this long, 5 mins is probably long enough as the milk has already been heat treated).

    While it is heating, boil the kettle and half fill the thermoserver to heat it.

    Once it has finished heating, let it cool for 5 mins, you want the light to go out.

    Add starter yoghurt and heat 10mins, 37deg, speed 3.

     

    Once finished heating tip the water out of your thermoserver and dry it quickly, add milk mixture and leave somewhere warm. I left mine wrapped in 2 baby blankets outside for about 8 hours on a 39 deg day.

Tip

Apparently the first batch of yoghurt is a sloppy one, my first was. This was my second attempt and I used the sloppy yoghurt as my starter. If your yoghurt doesnt work keep 4 tbs ans your starter (can be kept in the freezer and defrosted in the fridge) and freeze the rest for smoothies and cooking.

 

If you want a more natural yoghurt leave out the vanilla and sugar.

    I just made this as my first attempt at yoghurt. I left it to form overnight as it was still runny after 6 hours (it is Winter so not so surprising). My yoghurt eating family members like the texture but find it too tart - has anyone experimented with making it sweeter and more of a vanilla flavour? How much sugar/vanilla might I need to add to mimic a Ski type of vanilla???

    I will definitely be using it for smoothies and cooking but I'd like to make another batch for straight eating.

    I used this recipe when I made yoghurt for the first time on the weekend and it is amazing! I left it wrapped in a blanket outside for 9 hours on a 37 degree day and it was so thick and creamy.

    I made this yoghurt yesterday, our kids ate 3/4 of it tonight and requested more!! I'm making my second batch now. It was beautiful, thick and creamy. Im using yesterday's batch as my starter. i only put half the sugar and can still taste the natural starter, nice without being sweet. Thank you!

    Second time we have made this . Used the starter from previous batch . Doubled the milk powder to make it thicker. Fingers crossed X
