Ingredients

Base

  • 1 package Scotch Fingers
  • 75 g melted butter

Cheesecake Filling

  • 500 g Philadelphia Cheese
  • 3/4 Cup --- white sugar
  • 1 tsp lemon zest, Grated
  • 2 tsp gelatine, Dissolved in 1/4 cup boiling water, then cooled
  • 200 g white chocolate, Melted
  • 300ml --- thicken cream, Whipped Lightly
  • 1/2 cup raspberries frozen, or fresh
  • 1/2 cup raspberries frozen, Extra
  • raspberries, To serve

Recipe's preparation

  1. Add biscuits to the jug and crush, 6sec, speed 9, then add melted butterand mix 6sec, speed 4 press into the base of a lightly greased 22 cm springform pan and place into the fridge.

    Add the Philadelphia, sugar, and lemon rind and mix 40sec speed 8, scrape sides and do again. Then add the gelatin mixture, the melted chocolate, cream and 1/2 cup of raspberries and mix 40sec, speed 8, using the spatula to help.

    Pour the filling into the prepared base and stir in the remaining raspberries (so that you have whole ones inside). Refrigerate 3 hours or until set. Garnish with extra raspberries.

    Omg delicious!! First cheesecake I've ever made and it was amazing!! Will def make again!! I grated some caramilk chocolate on top 🤤🤤

    TIP: before you start, dissolve the gelatin, lightly whip cream and melt chocolate. ❤️

    My first attempt at a cheesecake let alone a thermomix cheesecake :O. I have never been a fan of cheesecake but I think your recipe has converted me. Beautiful Love. The only change I made was to use alycealexandra's recipe for the base as I wanted to make a gf cheesecake. So proud of myself and I'm sure I'll be making this quite regularly for special occasions. Thanks for sharing.

    I made this gluten free so no scotch finger biscuits but gluten free tea biscuits instead. This was yum and well received by all who ate it. I garnished with crumbled flakes. This will be made again so thanks for sharing tmrc_emoticons.-)
