Ingredients

Dough

  • 7 g dry yeast
  • 300 g water
  • 500 g Bakers Four
  • 60 g raw sugar
  • 30 g Butter, Softened

Apple Filling

  • 30 g Butter, Softened
  • 3 green apples, Peeled
  • 100 g brown sugar
  • 3 tsp cinnamon
  • to taste walnuts, Chopped

Icing

  • 150 g sugar, Raw or White
  • 2 tbsp Boiling water
  • walnuts, Chopped, to sprinkle

Recipe's preparation

    Dough
  1. 1. Add water and yeast to bowl, 1 min, 37 deg, speed 1.

    2. Add remaning dough ingredients 10 sec, speed 7.

    3. Closed lid"Closed lid" 2 mins, Dough mode"Dough mode"

    4. Remove dough from bowl and let it rest

    in a warm place to prove for 30 minutes. The dough should double in size. (I put mine in a glass bowl covered with glad wrap and put in the sink with warm water, covered with a towel)

     

  2. Filling
  3. 5. While dough is rising mix Brown sugar with cinnamon and set aside, Chop apples and walnuts (I do this by hand as I like them chunky)

    6. Once dough has risen place on floured surface and roll out into

    • a rectangle (approximately 20cm by 30cm)
    • 7. Carefully spread the butter onto the dough surface
      using a food brush. Press brown sugar on the butter and then top with apples and walnuts.
    • 8. Roll the dough up as tight as you can (this can be difficult), cut into 8 portions and place in a greased circle cake tin.
    • 9. Allow to prove again for anothe 30 mins. Pre-heat oven to 180d fan forced (200 if not fan forced)
    • 10. Place in oven for 30mins. or until golden on top. 

  4. Icing
  5. 11. Weigh sugar in mixing bowl and mill 20-30 sec, speed 9 into icing sugar.

    12. Add boiling water and mix 10 sec, speed 3 or until all sugar is smooth.

    13. Turn out cooled scrolls and drizzle icing over the top and sprinkle walnuts. 

Tip

If you dont have Brown Sugar I use 1 cup raw sugar mixed with 2 tbsp of Molasses.

 

If you need more sugar cinnamon mix to cover your dough, just use plain brown sugar.

 

Coffee Icing also works well with this. Simply add 1tsp to your boiling water befor you add it to the sugar.

    Fantastic! Made it the night before for a big brunch (apart from the icing) and it was still fresh and fluffy the next day. Looks amazing, everyone commented that it looked store bought. I was able to easily turn it out onto a plate in one piece to serve (good non stick cake tin greased well). I was worried it might be too sweet as it seemed like alot of brown sugar, but definitely needs that much. Will make again!

    I added a tsp of coffee to the hot water in icing and was great.

    I had a craving for apple cinnamon scrolls, and these were exactly what I was looking for. Delicious! Will definitely make these again.

    Absolutely beautiful

     I haven't had my Thermomix very long so I tried this recipe for my very first attempt at making cinnamon scrolls as I liked the thought of cooking them in a round cake tin. Wow. My husband and I have just finished eating some while they were still hot. Cooked perfectly. This recipe will now become a favourite to be be made for friends and family.
