Rustic Pizza Dough
- 825 g Baker's Flour
- 1.5 tsp Instant dry yeast
- 1.5 tsp salt
- 525 g water, Cold
- 20 g extra virgin olive oil

- 1. Lightly grease a large bowl/baking sheet with oil and set aside
- 2. Add the flour, yeast, salt into mixing bowl and mix 10 sec/speed 2.
- 3. Add the COLD water and
"Dough mode" for 8 minutes.
- 4. Transfer dough into prepared large bowl, cut into 6 pieces and form into balls.
- 5. Place onto oiled bowl/baking sheet, drizzle with 20g of oil.
- 6. Cover with plastic wrap and allow to prove for 2 hours
- 7. Use as needed.
Tip
After step 6 you can freeze the dough as individual balls or place in fridge overnight.
To shape the pizza, sprinkle surface with flour, take one piece of dough, press with your fingers, then knuckles to gently stretch the dough to desired size.
Cover with pizza sauce and toppings of choice. Bake for 5 - 10 minutes at 230c.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
