Recipe's preparation

  1. Insert whisk[/b]. Pour in cream and beat for 2 ½ mins / Sp. 3.5[/b]. meanwhile pour some water into a jug and add some ice cubes, to chill the water.
  2. Remove butterfly whisk,[/b] scrape down bowl, and beat for a further 10 secs. The mixture should have separated into clumps and a milky substance (buttermilk)
  3. Tip all contents into a sieve over a large bowl and with a spoon gently squish the butter to strain the liquid away. This buttermilk can be kept in the fridge for 3-4 days.
  4. Place the butter back into the Thermomix. Add the 500g chilled water and mix for 15 secs / Sp. 4[/b].
  5. Drain off the water and discard this time.





    Add the salt flakes and mix 15 secs / Sp. 4[/b].

  6. Take spoonful’s of butter at a time and place in the prepared tin or mould. Press firmly with a metal spoon. This will help compact the butter, and will also release more water particles which you must discard as much as possible.

  7. If butter is stuck round the blades, whizz 10 secs / sp. 6[/b].
  8. Freeze for ½ hr and turn out into a dish, or remove paper and wrap generously in cling film and freeze, or leave in the tin in the fridge until required.

    The buttermilk is delicious to drink or use in other recipes.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Thankyou ran out of butter on farm & used the Devondale long life cream I did have in the pantry to give us butter till town day to do a shop. Turned out great 👍🏻
