Feijoa, Ginger and Vanilla Jam
- 700 gram Feijoas peeled
- 1 grated lemon zest
- 30 grams lemon juice
- 50 grams fresh ginger chopped
- 1 teaspoons Vanilla Paste
- 1 pinches Cardamon Ground
- 450 g caster sugar

- Peel and add feijoas to the bowl, add the zest of a lemon.
Add 50g chopped fresh ginger. Add all remaining ingredients to bowl. - Place simmering basket on top of lid instead of measuring cup. Cook for 30 mins 120 degrees on speed 1.5.
- Scrape and stir , then cook for a further 15 mins on Varoma speed 2. Before commencing this step place your jars and lids in the varoma and place on top instead of simmering basket. This helps to sterilise your jars ready to pour jam into. Allow to cool then place in fridge. Yummy on fresh buttermilk scones.

If you prefer a smoother jam blend on speed 5 for 20 sec

Still yummy. I added vanilla this time & ground up cardamom before adding. Used 400g sugar & only cooked on Varoma for 8 minutes as 15 minutes was a paste(lovely to have with cheese but not so good to spread as jam so I have both!)
Delicious. I chopped the lemon zest and ginger first on speed 7 before adding the remaining ingredients.
This jam is yummy. I used 7 cardamom pods opened, rather than powder, which I removed before putting jam into jar. I didn't add any vanilla
